Christmas TIME 2009

Serious snow falls and drifting were in December.

Ginger bread cookies were fun to make.....
together.

Best Ginger Bread Men Recipe:
From the kitchen of Maria Olson
Approx 30 men

1 cup brown sugar

1 cup margarine or butter/softened

1 cup molasses

3 eggs/beaten

4 cups flour

2 tsp baking soda

1 tsp baking powder

1 tsp ginger

1 tsp cinnamon

1 tsp salt

1 tsp cloves

Cream sugar and margarine, add molasses and eggs, cream well. Combine and mix all dry ingredients in separate bowl and add to creamed sugar mix. Dough will be sticky so chill in fridge by wrapping dough in saran wrap for at least 1 hour. (Dough may last for 1 week in fridge). When ready take out and roll ½ the dough with lots of flour to ½ inch think and cut into men, or whatever you want. Place on cookie sheet covered with parchment paper and bake in a preheated oven @ 350 F for 7 -8 minutes.

BEST Soft Ginger Snaps

1 cup brown sugar

¾ cup margarine or butter/softened

¼ cup molasses (Domolco cooking molasses)

1 egg/beaten

2 cups flour

2 tsp baking soda

½ tsp salt

1 tsp ginger

1 tsp cinnamon

½ tsp cloves

Cream together brown sugar and margarine, add molasses and egg. Combine and mix all dry ingredients in separate bowl then add to the creamed sugar mix. Roll into 1 inch balls and cover in white sugar. Bake in preheated electric oven @ 325 F for 12 minutes OR in a gas oven @ 300 F for 10 minutes.
